I believe in dreams, and I also believe that each one comes to the right person at the perfect moment to become real. Assa was born this way: from a leap of faith and from a dream that lived in my heart and mind, waiting for its chance to bloom.

My name is Melissa, I’m Colombian and a pastry chef. Behind Assa there is so much more than recipes: there is my story of migration, discovery, and gratitude. What started as a personal journey has now become a space where I celebrate creative, artisanal pastry, where every dessert carries a part of me.

I defend authentic flavors. I believe that the most honest colors, aromas, and textures are born from patience and respect for ingredients, not from anything artificial. Every creation I make is a fusion between the local flavors of Australia and the traditions of my homeland, Colombia.

Health and wellbeing also inspire my work. I love to experiment with lighter alternatives, so that every bite feels like a trustworthy, joyful pleasure, something you can enjoy without guilt but with confidence. Living in Sydney has taught me to value what is local: the seasons, the producers, and the richness of this land are now an essential part of who I am and of what Assa represents.

I don’t see myself as just a pastry chef; I define myself as a creative pastry chef, because behind every recipe I prepare there is ingredient research, reaction studies, and technique exploration. For me, pastry is where science and art meet, giving life to unique creations.

My motto is “Flavor and care in every bite,” a conviction that unites two inseparable paths. Care is not only about choosing the right ingredients, it is also about the close relationship I want to build with you: listening, understanding your needs, and making you feel part of this project.

And since Assa was born out of gratitude, I want to share that with you through a special gesture: seeds to sprout at home. They are not just a gift, but a reminder that the most important things take time to grow and that, with a little dedication, they flourish into nourishment and life.
